Slow Cooker Beef Stew
An easy, hearty beef stew made with braising steak, smoked bacon, onions and root vegetables in a rich stock. Let the slow cooker do the work and serve with mashed potatoes.

Instructions
- Pour the just-boiled water into a heatproof measuring jug. Add the stock cube, tomato purée and yeast extract, then stir until the stock cube has dissolved.
- Put the beef, bacon, onions, carrots and celery into the slow cooker. Sprinkle over the flour, salt and dried herbs, add plenty of freshly ground black pepper, and toss everything together.
- Pour in the stock mixture and stir well. Add the bay leaf, then cover with the lid.
- Cook on low for 8–10 hours, until the beef and vegetables are tender.
- Remove the bay leaf, check the seasoning and serve with mashed potatoes.
