chicken cacciatore
Tender chicken thighs slowly braised in a rich Italian-style tomato sauce with peppers, mushrooms, olives and herbs. Serve with crusty bread, pasta or creamy polenta to soak up the sauce.

Instructions
- Heat the olive oil in a large frying pan over a medium-high heat. Season the chicken thighs with the salt and black pepper, then brown them in batches for 2–3 minutes on each side. Transfer the chicken to the slow cooker; it does not need to be cooked through at this stage.
- Add the onion, peppers and mushrooms to the frying pan and cook for 4–5 minutes, stirring, until beginning to soften. Add the garlic and cook for 30 seconds.
- Sprinkle the flour over the vegetables and stir for 1 minute. Pour in the red wine gradually, scraping up any browned bits from the pan, then stir in the chopped tomatoes, chicken stock, tomato purée, oregano and basil.
- Pour the sauce and vegetables over the chicken in the slow cooker. Add the bay leaf and cover with the lid.
- Cook on low for 6 hours, or until the chicken is tender and cooked through. Stir in the olives for the final 20 minutes.
- Remove the bay leaf, taste and adjust the seasoning. Stir in the lemon juice and scatter over the parsley before serving.
