Slow Cooker Cider Gammon, Leek and Carrot Bean Broth

Recommended slow-cooker size: 3.5 litre

• 3.5-litre slow cooker
• Large frying pan
• Sharp knife
• Chopping board
• Measuring jug
• Wooden spoon

• 900 g unsmoked gammon joint
• 1 tablespoon rapeseed oil
• 1 large brown onion, finely sliced
• 3 large carrots, peeled and cut into thick slices
• 2 leeks, trimmed, washed and sliced
• 2 garlic cloves, finely chopped
• 500 ml dry or medium cider
• 300 ml reduced-salt chicken stock
• 2 teaspoons Dijon mustard
• 2 fresh thyme sprigs
• 1 bay leaf
• 400 g tin butter beans, drained and rinsed
• 2 tablespoons fresh parsley, chopped
• 1 teaspoon cornflour mixed with 2 tablespoons cold water, optional
• ¼ teaspoon black pepper

If the gammon packaging advises soaking, soak it in cold water according to the packet instructions, then drain and pat dry. Remove any string or netting only if the joint is not being held together by it.
