Slow Cooker Chilli Con Carne
A hearty slow-cooked chilli con carne made with minced beef, beans, chopped tomatoes and diced red pepper. Smoked paprika and chilli powder add warmth and depth.

Instructions
- Heat a large non-stick frying pan over a medium-high heat. Add the minced beef and cook for 5–7 minutes, breaking it up, until browned throughout. Drain away any excess fat if necessary.
- Add the diced onion and red pepper to the pan and cook for 3–4 minutes until beginning to soften.
- Stir in the smoked paprika, chilli powder, salt and black pepper, then cook for 30 seconds.
- Transfer the beef mixture to a slow cooker. Add the baked beans, drained kidney beans, chopped tomatoes and beef stock, then stir well.
- Cover and cook on Low for 7 hours, or until the beef and vegetables are tender and the chilli is piping hot throughout. Stir once during cooking if convenient.
- Check the seasoning and leave the chilli to stand for 5 minutes before serving.
