Slow Cooker Sausage Casserole
A straightforward slow cooker sausage casserole with peppers, onion, garlic, mushrooms and BBQ seasoning. Cook it gently until the sausages are tender and the sauce is rich, then serve with creamy mash or in a giant Yorkshire pudding.

Instructions
- Slice the red pepper, white onion and mushrooms, if using, and finely chop the garlic.
- Place the sausages in the slow cooker. Add the red pepper, white onion, garlic and mushrooms.
- Mix the sausage casserole mix and BBQ seasoning with the water, then pour the mixture into the slow cooker.
- Cover with the lid and cook on Low for 8–10 hours or on High for 4–6 hours, until the sausages are cooked through and the vegetables are tender.
- Stir gently before serving. Serve with creamy mash or in a giant Yorkshire pudding, if desired.

- Cool leftovers promptly, then refrigerate in a covered container for up to 3 days. For freezing, divide the cooled casserole into individual portions, seal in freezer-safe containers or bags and freeze for up to 3 months. Freeze the casserole separately from any mash or Yorkshire pudding.
