Recommended slow-cooker size: 3.5 litre
Boneless lamb shoulder → Lamb leg steaks or diced lamb shoulder
Trim excess fat and keep the pieces roughly the same size.
Dried ready-to-eat apricots → Dried dates or prunes
Use the same weight and halve larger pieces.
Fresh coriander → Fresh flat-leaf parsley
The flavour will be milder but still works well.

Suitable for batch cooking
Cool leftovers promptly and refrigerate them in a covered container within two hours. Keep for up to 3 days in the fridge, or freeze for up to 3 months. Defrost: Defrost the frozen lamb dish in a covered container in the fridge overnight. Once defrosted, use within 24 hours and reheat until piping hot.
Defrost thoroughly in the fridge if frozen. Reheat in a saucepan over a medium heat, stirring occasionally, or in the microwave, until piping hot throughout. Add a splash of water or stock if the sauce has thickened too much.
Shred any leftover lamb into toasted wraps with salad and yoghurt, or spoon it over a baked potato with a little extra coriander.
